Sweetheart Pancakes

A fellow crafter/blogger recently advised me to update my blog reguarly and to blog about anything and everything that I am passionate about. As I developed a lot of intolerances a few years back as the result of stress, experimental cooking has certainly become a daily practice and passion of mine. I love cooking healthy meals for my husband and myself, and thought some of my recipes would be a fun thing to share with you all. I hope you enjoy them!

As Valentine's day is just around the corner, I decided that today's recipe would be for 'Sweetheart Pancakes'. They are 'Sweethearts' because they are a more healthy adaptation of a traditional recipe and, well-they're sweet (and heart-shaped if you can get your mitts on a heart-shaped pancake mould!).


This recipe is wheat free, yeast free, sugar free (bear with me on this one-they are sweet), and is suitable for a lactose-free diet.

As some of the ingredients listed will be new and/or unfamiliar to some of you, allow me to briefly introduce them (and don't panic if you don't know where to find them. They are all available online and at your local health-food store):

Goat's milk and Yoghurt: Goat's milk is a natural alternative to cow milk and can comfortably be consumed by many patients who suffer from cow milk allergies or sensitivity.*
Xyliotol: A wonderful alternative to sugar. Suitable for diabetics, lower in calories than sugar, suitable for thise suffering with a Candida infection. It even promoted healthy teeth!
Buckwheat Flour: Gluten-free, wheat-free alternative flour.
Spelt Flour: A wheat-free alternative flour. Not suitable for those with an intolerance to gluten.
Coconut Oil: The best oil you could possibly use! Virgin coconut oil is one of the few oils that is not damaged when heated to temperatures used in cooking, frying, and baking. It is wonderful for your skin, digestion, and has been associated with weight loss!

...This is an easy recipe, I promise! Just take a breath, recover from information overload, and enjoy :-)

Ingredients:
♥ 120g Buckwheat or Spelt Flour (if you find these icky, you can use wheat-flour)
♥ 2 eggs
♥ 200ml goat's milk mixed with 50ml water (you can another type of milk if you prefer)
♥ 3 tsps goat's yoghurt (use probiotic cow's yoghurt if you don't like goat's yoghurt)
♥ A pinch of salt
♥ A pinch of cinnamon
♥ 2 tbsps Coconut oil (and some extra to grease the pan)
♥ Xyliotol and lemon to sweeten


Here we go....

1) Sieve the flour into a large mixing bowl. Make a well into this and add the two eggs. Whisk this all together, making sure that you add all of the flour from the sides of the bowl.



2) Keep whisking, adding the salt and cinnamon. Add the milk and water mixture bit by bit. Finally add the yoghurt. 


3) Whisk until you have a smooth batter.


4) Heat a frying pan and melt the oil. Spoon two tablespoons of oil into the batter and mix in.



5) Put a spoonful of batter into your frying pan and 'smooth' out using a serving spoon. If you have a heart-mould, spoon the batter into this (not too thickly now!).


6) Fry until golden and flip (just don't get them stuck to the ceiling!).



7) Serve with a squeeze of lemon and a teaspoon of xyliotol. Happy Valentine's Day!!

*If you have a lactose-intolerance, please consult your doctor before starting to take goat's milk.
